When we started following a keto diet, I wanted to make the classic Mississippi Pot Roast work for us. So, I found ways to modify the recipe to make it fit the keto diet.

What is Mississippi Pot Roast?

Mississippi-style pot roast is called so because it originated in the state of Mississippi in the United States. This slow-cooking method of cooking a flavorful beef roast is known to produce tender and juicy results.

What is the Difference Between Mississippi Pot and Regular Pot Roast?

This Keto recipe is a delicious way to make a low-carb pot roast. Instead of potatoes and carrots, you’ll use butter, ranch dressing mix, and pepperoncini. It’s sure to be a hit!

If you’re following a strict keto diet, you can skip the packet of gravy mix in the traditional recipe. Instead, check out Pinterest for recipes that show you how to make your own ranch dressing mix.

Do You Sear the Pot Roast Before Cooking?

I used to cook the roast in a cast iron skillet, but I tried skipping that step one time because I was in a hurry. I couldn’t tell the difference in taste.

The roast tastes just as delicious, so now I don’t bother searing it. It’s quicker and there’s less mess.

This Mississippi Pot Roast Keto Recipe is a breeze to make! Just put all the ingredients in the slow cooker, add a pat of butter on top, and turn it on. You don’t even have to think about it until it’s finished.

It reminds me of when I was a kid and I’d go to my grandma’s house for Sunday lunch. It’s like a warm hug!

How to Choose the Best Cut of Beef for A Pot Roast

I was surprised when I followed a recipe for making a roast in the Crock-Pot. The best roast was made using beef that had lots of marbling, which is when fat is mixed in with the meat. This makes the meat really tender. The best types of roasts to use are listed below.

1. Chuck roast is a cut of beef with a lot of fat in it. It’s also known as shoulder roast, blade roast, chuck shoulder, or seven-bone roast.

2. Bottom Round Roast is a leaner type of roast than chuck roast. It’s often called Rump Roast or London Broil.

3. Beef brisket has a higher price than other cuts of beef. It’s usually cooked in a BBQ or smoker and it has a lot of fat.

How to Make the Gravy?

Most people who follow a low-carb diet avoid corn starch and regular flour, which are often used to make the gravy thicker in pot roasts. Xanthan Gum is a great choice if you’re following a keto diet. Just add a tiny bit, wait for five to ten minutes, and it will thicken your food.

Start with a small amount – like 1/4 or 1/2 teaspoon – and then add more if you need to. Be careful – if you use too much, the food could be slimy.

How to Store the Pot Roast

This delicious Low Carb Pot Roast tastes great and will stay good in the fridge for up to 4 days, or in the freezer for 5-6 months if stored in a container that’s safe for freezing.

Tips and Tricks:

1. Use a Chuck Roast for slow cooking. It will be more delicious and tender than other cuts of meat.

2. Use low-sodium beef broth instead of water for a delicious, rich taste.

3. Skipping the step of searing a pot roast saves time, but experts say that it’s best to do it. I tried it both ways but couldn’t taste the difference.

4. The pot roast might be too tough to eat. To fix this, close the lid and let it cook for a bit longer. Check it in an hour to see if it’s ready.
