Serves: 10 Prep Time: 20 Minutes Cooking Time: 1 Hour 30 Minutes 1 Hour 30 Minutes

Ingredients

6-7 pounds (3-3.5 kg) pork shoulder roast, cut into 4-5 large pieces

1/4 cup steak seasoning

2 teaspoons sea salt

1/4 cup (60 ml) avocado oil

1 cup (250 ml) low-sodium chicken broth

2-3 cups (500-750 ml) BBQ sauce

Instructions

Rub the meat with steak seasoning and salt.

Heat 2 tablespoons of avocado oil in an electric instant pot tuned to saute mode.

Add two pieces of seasoned meat and sear for 2-3 minutes on 2 sides. Remove seared meat from the pot and transfer it to a large plate.

Add the remaining oil and sear the other pieces of meat.

Pour the chicken broth into the instant pot, then return the seared meat to the cooker.

Cover the pot and lock the lid.

Set the machine to cook to high pressure. Set the timer to cook for 60 minutes.

Using the natural Release method, bring pressure to normal. Carefully unlock and open the lid.

Remove cooked meat from the instant pot and transfer it to a large plate. Reserve cooking liquid.

Using two forks, shred it.

Mix in the BBQ Sauce. Add 1/2 cup (125 ml) of the reserved liquid to reach the desired consistency.
