Serves: 4 Prep Time: 10 Minutes Cooking Time: 8 Hours 8 Hours

Ingredients

4-6 pounds whole chicken

2 carrots, peeled and chunked

1 stalk celery, chopped

2 tablespoons kosher salt

1/2 tablespoon freshly ground black pepper

4 cups (1 L) water

Instructions

Prepare the chicken by taking out any bits and pieces inside the body cavities.

Rinse the chicken under cold water, then pat it dry with paper towels.

Lay carrots and celery on the bottom of a slow cooker.

Season the chicken with salt and black pepper on all sides and inside in the cavity as well (use any of your favorite spices).

Put seasoned chicken on top of the vegetables.

Pour 4 cups of water into the side of the crockpot next to the chicken.

Don't pour the water on top of the chicken because it will wash away the salt and pepper. (If you don't want stock, don't do this step).

Cover the pot and cook on a low-heat setting for 7-8 hours or until chicken and vegetables are tender.
