Switch the instant pot to saute mode and simmer the sauce until it has thickened, stirring occasionally, for about 15 minutes. Return the chicken to the pot to warm through. Once they are wormed, serve immediately. Whole black pepper can substitute for coarse ground black pepper in this dish. Avocado oil can be replaced with olive oil at a 1:1 ratio. This recipe calls for chicken thighs, but the best substitute for that would be drumsticks. You can substitute them 1:1 and the taste will be similar. Chicken stock isn't always an option, so you can use beef or vegetable stocks instead. Both are interchangeable at a 1:1 ratio.
